4 oz. Onion - Chopped
1 1/2 tbsp. Garlic - Minced
1 (big) tbsp. Tomato Paste
3/4 c. Tomato Puree
3 Whole Tomatoes - Blanched, Outer Petals Cut-Off, Cored, Seeded
6 oz. Chicken Stock
1 tbsp. Thyme
1 tbsp. Parsley
1 tbsp. Basil
1 tbsp. Oregano

Directions:

Sweat onion, then garlic. Add tomato paste, puree, tomatoes and stock.

Add spices.

Simmer fifteen (15) minutes to one (1) hour.

This is one of the recipes that I got while at the CIA's Italian Boot Camp in May 2009.

Homemade chicken stock was available in their kitchen. It does make a big difference in the flavor of the sauce.
