8 lb. sausage
1 T. pepper
2 T. salt
½ T. garlic, mashed
2 T. fennel seeds
½ - 1 T. red pepper (1 T. for hot)
½ - ¾ c. water
natural hog casing

Directions:
Directions:
Soak casings in luke warm water, rinse and soak again until ready for stuffing.

Mix all ingredients together until well blended.

Use a sausage stuffer or some manner to stuff the casings. Prick the casing as you go, then prick again once stuffing is completed.

At this point, refrigerate, freeze or cook immediately. Cooking style is your choice: steam, bake, pan fry or grill your choice but it is best as a part of a great homemade spaghetti sauce.
