7 lbs. potatoes
3 stalks celery
1 red onion
2-3 carrots
1c. green bell pepper, chopped
9 green onions, plus chives
ham, chunked
1 qt. half & half
potato water
1/2c. butter
2 Tbsp. parsley flakes
1/4 tsp. garlic powder
1/4 tsp. pepper
2 1/2 tsp. salt

Peel and cook potatoes. Chop celery, onions, green onions, and bell peppers. Grate carrots. Saute all vegetables in 1/2 c. butter. Add parsley, garlic powder, salt and pepper. Drain cooked potatoes, reserving the water. Mash all but 2 c. of the potatoes. Chop the other potatoes fine. In a large pot combine the veggies, potatoes, half and half. Add as much ham to the amount of soup you will be serving (ham doesn't freeze well). Add reserved potato water until it reaches desired consistency.
