1 cup E-Z bake Corn meal
4 tsp baking powder
1 tsp salt
4 tbsp sugar
1 cup Enriched E-Z Bake Flour
4 tsbsp melted shortening
1 ¼ cups milk
1 egg

Directions:
Directions:
Sift all dry ingredients together
Add melted shortening
Combine milk and beaten egg and stir into first mixture just enough to dampen ingredients
Fill greased muffin pans 2/3 full and bake in hot oven 400 degrees for about 25 minutes Makes 12 muffins
