1 lb. Orzo (or other pasta
2 small zucchini
1 small summer squash
1 red pepper
1 jar artichokes
1 block feta cheese
1 lemon
4 tbsp. olive oil
1 tbsp. balsamic vinegar
2 tbsp. chopped fresh basil
1 tbsp. honey

Cook Orzo according to instructions then mix with 1 tbs. olive oil and let cool.

Cut zucchini, summer squash, and red pepper into strips. brush with olive oil, season with salt and pepper and grill over medium heat until cooked. Let cool and chop into bite size pieces.

Whisk balsamic vinegar, 2 tbsp. olive oil and juice of 1 lemon together with honey and salt and pepper until smooth.

Add veggies, dressing, chopped basil, artichokes, and crumbled feta cheese to cooled pasta.

Serve room temp. or cold.
