1 large onion minced
4 cloves garlic crushed
Juice and pulp of 2 limes
1 green bell pepper minced
1 red bell pepper minced
3 small habanero peppers seeded and minced
¼ cup vegetable oil
¼ cup vinegar

Directions:
Directions:
Toss onions and garlic with lime juice. Set aside in a non-reactive glass or ceramic bowl at room temperature for 2 hours. Scoop onion mixture into a large skillet. Add peppers and vegetable oil. Sauté over medium heat, bring to a boil, reduce heat, cover and simmer for 20 minutes. Remove from heat and stir in vinegar. Cool and store in sterilized glass bottles. Keeps up to 1 month in the refrigerator.
