2 quarts filtered water
½ pound ginger root chopped fine
½ cup granulated sugar
½ cup fresh lime juice and pulp
1 tbsp. freshly grated lime zest
¼ cup honey

Directions:
Directions:
Bring water, ginger and sugar to a boil in a large saucepan. Reduce heat, cover and simmer for 15 minutes. Remove from heat and cool. Strain for solids. Stir in lime juice, zest and honey. Refrigerate for 2 days. Serve over ice.

West Indian ginger beer isn’t like Schweppes or Canada dry. It’s sweet and spicy. Great if served over ice. Apparently ginger is great for your lungs. I’ve tried this beverage many times. You really can feel the respiratory benefits.
