2 c. sugar
2 c. cake flour
2 tsp. baking soda
2 tsp. cinnamon
1-1/2 c. Wesson Oil
3 c. grated carrots
4 eggs
1 tsp. salt

FILLING
2-1/2 - 8 oz. pkgs. cream cheese
1 stick butter (1/4 lb.)
1/2 box powdered sugar (1-1/2 cups)
1 tsp. vanilla
1 cup chopped nuts (I use walnuts)

Directions:
Directions:
Preheat oven to 350º.

Prepare 3 round cake pans - grease, flour, pour off extra flour and then put wax paper cut to fit in the bottom of the pans.

Combine all cake ingredients and divide between the 3 cake pans. Bake at 350º for 20-30 minutes.

Combine the filling ingredients and spread between the layers, on top and around the side of the cake.
