1 cup brown sugar
1 tsp. black pepper
½ tsp. allspice
½ tsp. celery seed
1 tsp. corn meal
2 tsp. dried parsley
2 tsp. granulated garlic

Mix ingredients and put over the fish for 4 hours. Rinse well and pat dry. Air dry until glaze forms and put it on the grill or smoker.
