2 large sweet onions, peeled and thinly sliced
1 T. olive oil
3 C. vinegar
1/4 c. olive oil
2 T. sugar
6 black peppercorns
6 sprigs thyme

Directions:
Directions:
Saute sliced onions on low heat in 1 T. oil until soft. Combine remaining ingredients in a non-reactive saucepan, and bring to a boil. Add onions to hot liquid and simmer for 5 minutes. Remove from heat and allow to steep at least 2 hours or overnight. If leaving overnight, place in a bowl and cover; chill. When ready to serve, drain the liquid.
