1 small head (3 lbs.) cabbage
1 can (1 lb. 12 oz.) tomatoes
1-1/2 lbs. lean ground beef
1 egg
1/2 c. uncooked rice
2 tsp. salt, divided
1 can (8 oz.) tomato sauce
1/4 c. cider vinegar
1/4 c. lemon juice
1/3 c. firmly packed light brown sugar
1/2 c. golden raisins
1 apple, pared and sliced thin

Wash cabbage and drain. Shred cabbage coarsely and place in large pot, spooning tomatoes and liquid over cabbage. Cover pot and simmer on low heat for 20 minutes to wilt cabbage. Meanwhile combine ground beef, egg, rice and 1 tsp. salt; mix until well blended. Shape into 1-in. balls and reserve. Combine tomato sauce, vinegar, lemon juice, brown sugar and remaining salt, stirring to mix well. Pour cover cabbage in pot and stir well. Add meatballs in a layer on top. Cover and simmer 1 hour. Add raisins and apple slices. Cover and cook 10 minutes more.
