4 1/2 c sugar
2 tsp Cinnamon
1 c cornstarch
1/4 tsp nutmeg
1 tsp salt
3 T. lemon juice
2-3 drops yellow food color
5 1/2 - 6 lbs tart, peeled, apples slices

Directions:
Directions:
In a large pan blend the first 5 ingredients. Stir in 10 cups of water. Cook & stir until thick and bubbly. Add lemon juice & food color. Pack apple slices into hot jars leaving 1" head space. Fill with hot syrup leaving 1/2" headspace. Adjust lids.
Process in water bath 15 min. for pints & 20 min. for quarts.

When using in pie crust, bake 400 degrees for 50 min.

The syrup is pretty thick when trying to pour it over the packed jars. In order to fill all of the "spaces" I stick the handle of a wooden spoon down in the jar, pour some syrup, then move the spoon to another spot, until I'm satisfied that its full.

I got this recipe from Howie Neider years ago. The pies are just like homemade. Pour a quart jar in a pie crust, dot with butter, top with whatever, and bake!
