1 lb lean ground beef (I use 2lbs)
3 T olive oil
1 large can tomatoes
2 - 8oz cans tomato sauce
1 - 6oz can tomato paste
1 can sliced mushrooms
1 small onion sliced
3 slices green pepper ( I use more)
2 tsp Italian seasoning
Salt and Pepper
1 pkg lasagna noodles
1 pkg pizza cheese (use more)
1 lb cottage cheese (use more)
Parsley flakes

Brown beef in 2T of oil. Add remaining ingredients except noodles and cheese. Simmer for 2 hours.Boil noodle according to package directions adding 1 T of oil and only 1 tsp salt to the cooking water. Drain. In an ungreased baking dish alternate layers of noodles, sauce, cottage cheese, and pizza cheese. Repeat layers.Garnish with parsley flakes. Bake 375 for 1 hour 30 minutes
