2 c. sifted cake flour
1/2 c. cocoa
1/2 t. salt
1/2 c. butter
1-3/4 c. sugar
3 eggs, separated
1 t. vanilla
1 t. baking soda
1 T. hot water
1 c. cold water

Directions:
Directions:
Heat oven to 350º.
Sift together flour, cocoa and salt.
Cream together butter, and sugar until light and fluffy. Beat in egg yolks and vanilla; beat well.
Dissolve baking soda in 1 T. hot water. Stir into creamed mixture.
Add dry ingredients alternately with 1 c. cold water, beating well after each addition.
Beat egg whites until stiff but not dry. Fold into cake batter.
Pour batter into greased 13"x9"x2" cake pan.
Bake in moderate oven 30 minutes or until cake tests done. Cool in pan on rack.
