Ingredients: 1 1/4 c. all-purpose flour 1/2 c. powdered sugar 2 tsp. instant coffee granules (optional) 2/3 c. butter or margarine, softened 1/2 tsp. vanilla extract 2 c. semisweet chocolate morsels, divided in half Vanilla ice cream (optional, but delicious =)

Directions:Put on your favorite dancing song. This is crucial.
Preheat oven to 325º F.
Combine first 3 ingredients in a medium mixing bowl; add butter and vanilla, & beat at low speed with an electric mixer until blended. This dough takes a while to smooth out, don't jump the gun or the shortbread won't be at its delectable best =). Stir in 1 cup of the chocolate morsels. Press dough into an ungreased 9-inch square pan; prick with a fork to make pretty designs!! Bake at 325º for 20 minutes or until lightly browned.

Sprinkle remaining 1 cup morsels over the top of the warm shortbread, and spread to cover as the morsels melt. Cut shortbread in pan into about 25 squares, then cut each square into 2 triangles. Let cool slightly in pan before removing. Serve warm with vanilla ice cream. |
