2 T. shallots
1 minced garlic clove
2 T. butter
10 oz. package frozen spinach
1/2 tsp. salt
1/8 tsp. pepper
2 pinches nutmeg
1 frozen pie crust
2/3 c. cubed Swiss cheese
2 eggs + 3 egg yolks
1 c. heavy cream
1 c. half & half
2/3 c. grated Gruyere cheese
1/2 c. chives

Directions:
Directions:
Sauté shallots and minced garlic in butter until translucent. While shallots are cooking, cook spinach in saucepan on medium heat until dry then add spinach to shallots and garlic. Add salt, pepper and nutmeg – mix all together then set aside. In frozen pie crust, place Swiss cheese in bottom. In a bowl, mix eggs, yolks, heavy cream and half & half. Add spinach mixture to egg mixture and pour into pie crust. Sprinkle Gruyere cheese over the top and sprinkle with chives. Bake at 375 degrees for 30 minutes, make several punctures on top with a knife and bake for another 15-30 minutes at 350 degrees or until set in the middle. Let sit 20 minutes.
