8 thick slices of bacon
4 Tbsp minced shallot
3 Tbsp red wine vinegar
6 Tbsp olive oil
Salt and pepper
1 large head romaine
1 tomato cut into wedges
6 oz Feta cheese

Directions:
Directions:
1. Cook bacon, drain on paper towels. Cut into 1 inch pieces.
2. In a small bowl, combine the shallot, vinegar and olive oil and season with salt and pepper. In a large bowl, toss the lettuce with the vinaigrette. Mound on plates. Top with the bacon, tomatoes and feta.
