serves 8-10
1-32oz.sauerkraut, rinsed and drained
1/2 cup chopped onion
1/4 c. chopped parsley
2 tsp. caraway seed
4 c. shredded swiss cheese (16 oz)
1-1/3 c. thousand island dressing
1 lb. thinly sliced cooked corned beef coarsely chopped....or pastrami
1/2 c butter
6 slices rye bread cubed into 1/2 in pieces

1. In a large mixing bowl combine drained sauerkraut, onion, parsley & caraway seed
2. Spoon mixture into an ungreased 13x9x2 baking dish & spread the mixture evenly
3. Layer with half the cheese, half the salad dressing, and all the corned beef.
4. Layer the remaining salad dressing & cheese.
5. In a large skillet, melt the butter or margarine & add bread cubes..stir till coated. Sprinkle bread cubes over the top of casserole.
Bake in a 375 d. oven x 35 min. or till heated thru and bread cubes are brown.

I have doubled this for a large group of 20
