1 (8 oz.) pkg. dried elbow macaroni
1/4 c. butter or margarine
1/4 c. all purpose flour
2 c. milk
1 tsp. salt
2 c. (8 oz.) shredded sharp Cheddar cheese or American cheese
Paprika (optional)

Directions:
Directions:
Cook macaroni according to pkg. directions, omitting salt. Drain and set aside. Melt butter in a heavy saucepan over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk; cook over medium heat, stirring constantly, until thickened and bubbly. Stir in salt and cheese, stirring until cheese melts. Stir macaroni into cheese sauce, and pour into a lightly greased 2-quart baking dish or an 11 x 7 inch baking dish. Sprinkle with paprika, if desired. Bake uncovered at 350º for 25 to 35 minutes or until bubbly. Let stand 5 minutes before serving.
