Vegetable Gumbo (Quick & Easy) Recipe

2 med tomatoes diced
1/2 med onion chopped
1/2 green bell pepper
1/2 c okra slices
1 can white kidney beans
1 can tomato soup
1 c rice cooked
1/2 c chicken broth
2 bay leaves
1 t fresh basil (optional)
1 T butter
olive oil
salt, pepper, garlic salt to taste

Saute onion & bell pepper in butter & olive oil on med low heat until wilted. Add tomato & cook 5 mins. Add soup, bay leaves, basil seasonings & beans. Cook on med low for 10 mins stirring occasionally. Add chicken broth & sliced okra and cook until tender about 15 mins.
Serve over rice.
