8 very large carrots
1 large onion (finely chopped)
3 cloves garlic (finely chopped)
3 (medium or lrg.) boneless chicken breast (Cubed)
3 boneless pork chops (cubed)
1 can dark red kidney beans
1pkg frozen corn
2T tarragon
6tsp cumin
2tsp curry powder
Olive oil
1 stick butter

Directions:
Directions:
Put carrots in a 4qt. pot and fill with water to cover carrots add 1 tsp salt, 1 stick butter and 2T tarragon.
In a frying pan lightly brown onions and garlic. add to carrots.
In same frying pan brown chicken and pork after browning add to boiling carrots.
Boil 20 minutes then simmer.
