6 large tomatoes
1 onion chopped
1 cup chopped fresh cilantro
2 fresh Anaheim chilies, seeded and diced
4 serrate chilies, minced
2 tbsp red wine vinegar
2 tbsp olive oil
2 garlic cloves, minced
salt to taste

Directions:
Directions:
Clean and place a small x on the bottom of the tomatoes

Add tomatoes to large pot of boiling water and blanch for 30 seconds

Transfer and cool the tomatoes in a bowl of cold water.

Peel the skins off the tomatoes; cut and remove seeds; chop and place in bowl.

Add all other ingredients to the tomatoes, salt to taste. Chill 1 to 4 hours before serving.
