1 lb shrimp cleaned and deveined
1/2 c finely chopped water chestnuts
2 strips bacon
3 slices bread, crusts removed
salt and pepper
1 egg beaten
2 tablespoons cornstarch
Peanut oil for deep frying

Directions:
Directions:
Mince shrimp, water chestnuts and bacon. Place in bowl, dice bread into very fine cubes, mix into shrimp mixture.Add salt, pepper, egg and cornstarch. Combine throughly.
Heat enough oil to be able to turn off, about 1 & 1/2 inch.
Using 2 tsps, form a 1" diameter ball, drop into hot oil, quickly add 7 to 8 shrimps. Allow each to fry for 2 minutes, turning so each side becomes golden brown. Remove cooked shrimp balls to a drying rack or paper towels to drain. To serve place on a serving platter and garnish with cilantro.
