1 T. Ghee

1 T. cumin seeds

10 med. cloves garlic, finely chopped

1 large tomato, chopped (1 cup)

1 t. Garam Masaala

1 cup water (or some more if needed)

4 cups black-eyed peas

1 t. salt

1 cup yogurt

1 t. grated gingerroot

8 cups greens

1/2 t. salt

Directions:
Directions:
1. Heat Ghee in a large saucepan over medium-high heat. Add cumin seeds; sizzle 30 seconds. Add garlic; cook 1 minute until golden brown.

2. Stir in tomato and Garam Masaala. Cook 4 mins. Stir in water black-eyed peas and 1t. salt. Heat to boiling; reduce heat to medium. Simmer uncovered 10-20 minutes.

3. Beat yogurt and add to tomato mixture little by little (in bowl).

4. Heat 1 T. Ghee and ginger root in skillet and stir 30 mins.

5. Add greens and salt 3 mins or until wilted.

6. To serve, place peas in serving bowl and top with cooked greens.
