3/4 c. brown sugar
1 c. corn syrup
1/4 c. butter
2 eggs (slightly beaten)
1 tsp vanilla
Cherries, raisins or coconut (optional)

Directions:
Directions:
Simmer the brown sugar, corn syrup and butter for 5 minutes on low heat. Let cool. Beat 2 eggs slightly and add to the mixture, along with 1 tsp vanilla. If using cherries, raisins or coconut, place a spoonful in the bottom of the unbaked tart shells, then add the filling over top. Bake at 375º for 15 - 20 minutes, or until the pastry is nicely browned and the filling has set. Let cool and serve.
