1 can crushed pineapple w/liquid
2/3 c. sugar
3 oz. Lemon Jello or other lemon gelatin
8 oz. cream cheese
1 c. or more peeled and sliced apples
1 c. or more chopped celery
1 c. or more pecans
16 oz. Cool Whip or other whipped topping (divided)

Combine pineapple (including juice) and sugar in a sauce pan, bring to a boil. Continue boil for 3 minutes. Remove from heat. Add dry lemon gelatin to mixture and stir until dissolved. Add softened cream cheese until it is melted. Fold-in apple, celery, nuts and 1/2 of the whipped topping. Put into a 9" X 12" glass or ceramic dish and cool until mixture sets. Once cooled, cover the top with the remaining whipped topping and additional nuts if desired.
