4 cloves garlic
2 c. cold mashed potatoes
1 c. Greek Extra Virgin Olive oil
1/2 c. vinegar
1/4 c. water (optional)
TT Salt
TT Pepper

Directions:
Directions:
Blanch the garlic cloves for easier peeling. Mash the garlic to a pulp using a mortar and pestle (alternatively, you could use a food processor). Add the mashed potatoes and continue pounding until thoroughly blended. Add the olive oil, vinegar and water (if needed), alternatively and a little at a time until all are blended into the mixture. Continue stirring briskly for a smooth sauce. Season to taste and stir again until well blended. Cover and store in a cool place until used.

This recipe was given to me by my Uncle Perry on December 15, 1984. Perry is married to my Aunt Loella. His heritage is Greek and he is a marvelous cook. He learned well from his mother, Anastasia, and father, Christ, who did lamb to die for on "Greek Easter".

By the way, this dish can be served as either an appetizer dip or it also may be served as a side dish to lamb or other meat as garlic mashed potatoes.
