2 pounds mini Yukon gold potatoes (unpeeled)
4 scallions chopped
2 shallots sliced thin
3 T butter
2 T olive oil
Salt & Pepper

Directions:
Directions:
Boil or steam the potatoes until done (fork inserts easily). Place the potatoes in a ziploc and smash with a meat tenderizer mallet or smash as best you can....should be still pretty lumpy.

In deep frying pan, saute scallions and shallots in olive oil. When soft add potatoes, butter and mix together. Allow the potatoes to fry slightly, turning frequently. Salt & Pepper to taste.
