1/2 c. Butter
1/3 c. Flour
1 tsp. Salt
1/4 c. Parsley, minced
2 tsp. Onion, grated
2 tsp. Lemon Juice
Few drops Tabasco Sauce
2 c. Milk
2 Egg Yolks, slightly beaten
1 c. Crab Meat, flaked
1 c. Lobster, chopped, if available
1 c. Shrimp, cooked and cut-up
2 Egg Whites, beaten
2/3 c. Bread Crumbs, buttered

Melt butter; blend in flour and seasonings. Cook over low heat, stirring until smooth and bubbly. Remove from heat and stir in milk. Bring to boil; boil 1 minute, stirring constantly. Remove from heat, stir in egg yolks and bring to boil again stirring constantly. Remove from heat and add seafood. Fold in beaten egg whites. Spoon hot mixture into baked puff pastry shells or individual baking dishes. Top with crumbs and sprinkle with paprika. (If using baking dishes, bake 15 minutes at 350º.)
