2 lbs. Scallops
Salt
White Pepper
Flour
3 T. Butter
4 T. Vegetable Oil
8 T. Butter
1 tsp. Garlic, chopped
2 T. Fresh Parsley, chopped
1 Lemon, sliced
Cooked angel hair pasta
1 pkg. Spinach, cooked

Directions:
Directions:
Cook pasta and add spinach. Wash scallops and dry with paper towel. Season with salt and pepper. Dip in flour. Melt 3 T. butter and oil in skillet. Saute scallops until lightly browned. Cook through. Remove to platter. Heat remaining butter in skillet, but do not let it brown. Quickly stir in garlic and cook until done. Add scallops and serve over pasta. Garnish with parsley and serve with lemon wedge.
