1/4 c. salad oil
3 lb. pot roast
1/2 tsp. pepper
4 tsp. salt
3 1/2 c. hot water
6 med. onions, peeled
6 med. carrots, peeled and halved lengthwise
6 med. potatoes, peeled and halved
1/4 c. flour

Directions:
Directions:
Heat oil in large skillet or dutch oven. Sprinkle roast with pepper and 2 tsp. salt. Brown slowly in oil. Reduce heat, add 1/2 c. water. Cover and simmer 1 1/2 hours, adding water in small amounts, as needed. Add onions; cook, covered for 30 minutes. Add carrots, potatoes ans remaining salt. Simmer another 30 minutes or until all is tender. Romove to serving platter and keep warm. Make a paste of flour and remaining water; stir into pan juices. Heat to boiling point, stirring to keep smooth until thickened. Serve gravy with roast and vegetables.
