1/2 Cup minced Onion
1/2 Cup cooked, well squeezed chopped spinach, you can use frozen..(be sure to get all the water out).
4 eggs
1-1/2 Cup cottage cheese (large curd)
1/2 cup grated parmesan cheese
1/4 Cup whole milk
nutmeg, salt and pepper to taste.
Tomatoes to decorate

Cook onion in 2 TBS butter until soft.
Add spinach, stir and cook for 2 minutes
Remove from heat. stir in 1/4 Cup whole milk, nutmeg, salt and pepper to taste.
ALLOW TO COOL
In separate bowl combine 4 eggs beaten
1-1/2 cups cottage cheese and 1/2 cup grated parmesan cheese. When onion mixture is cool add to egg mixture.
Grease pie plate with butter
Put combined mixture in pan
Slice tomatoes to decorate around edge of pan
Bake in preheated oven 350 degrees for 35-40 minutes or until knife inserted in center comes out clean.

Let cool on rack 10 minutes before serving.
