1/4 c. butter
1 qt. vegetable broth or stock
1/2 c. sherry
2 tsp. lemon juice
1/2 tsp. old bay seasoning
8 oz. Smoked salmon, chopped
1/3 c. all purpose flour
1 quart half and half
1 T. Worcestershire sauce
1 tsp. tabasco sauce
1/4 tsp. ground white pepper
fresh rosemary sprigs

Melt butter in Dutch oven, whisk in flour until smooth. Cook stirring continuously for 5 minutes, gradually stir in stock and bring to a boil. Reduce heat and simmer for 10 minutes. Add half and half and the next 6 ingredients cooking until warm. Add chopped salmon and top with rosemary sprigs.
