1 baked 10 inch pastry shell
4 T. butter
(do not puncture shell)
2 T. minced shallots
1 lb. fresh mushrooms, thinly sliced
1 1/2 tsp. salt 1 tsp. lemon juice
4 eggs
1/2 c. Swiss cheese, grated
1 c. heavy cream
1/8 tsp. pepper
1/8 tsp. nutmeg

Heat oven to 350º. Melt butter in skillet. Add shallots and cook for a few minutes, stirring constantly. Add mushrooms, 1 tsp. salt and lemon juice. Cover skillet and simmer over low heat for 10 minutes. Uncover, increase heat and boil for 5-10 minutes or until liquid is completely evaporated and mushrooms have begun to saute in butter. Stir to prevent scorching.

Put mushroom mixture in pie shell. Beat the eggs and cream together, add remaining salt, pepper, and nutmeg. Pour over mushrooms. Sprinkle with cheese and bake for 35 minutes or until inserted knife comes out clean.
