3 beaten eggs
1 1/2 tsp. salt
6 T. milk
3 c. sifted all-purpose flour
3 drops yellow food coloring (optional)
flour to roll noodles on

Directions:
Directions:
Combine eggs, salt, milk & food coloring; add 3 c. of flour or enough to make stiff dough. Roll very thin on floured surface, you should have about an 18 inch circle. Let dry on floured circle for about 6 hours, turning occasional. When they are dry enough not to smash but not hard, cut circle in 2 inch stripes, stack stripes and slice in 1/4 inch slices. Use now or freeze for later. Makes about 9 cups of cooked noodles.
To cook; drop in boiling broth or water and cook uncovered about 15 min. Taste for doneness.
