Stuffed Zucchini Recipe

4 zucchini ( about 2 lbs) halved lengthwise and seeded.
2 Tbsp olive oil
1 onion, finely chopped
3/4 lb ground beef or turkey
4 oz can corn
1 tsp cumin
Salt & pepper
8 oz can chopped stewed tomatoes with green chili
1 cup jarred pickled jalapeños, finely chopped
8oz bag Mexican style shredded cheese.
Sour cream for garnish (optional)

Preheat oven to 450º
Put 1 Tbsp olive oil evenly in 9x13 inch baking dish,
Arrange zucchini in dish and bake for approx 15 minutes, until tender.
Meanwhile in medium skillet, use remaining olive oil and saute onion until softened. Add meat & cumin, cook until browned. Season with salt & pepper.
Stir in tomatoes, jalapeños and corn.
Lightly salt zucchini and add beef mixture to each Zucchini, sprinkle with cheese.
Put back in oven until cheese is melted, about 10 minutes.
Use sour cream for garnish.
