2 (10 oz.) packages frozen chopped spinach
6 large eggs, slightly beaten
1 stick butter, softened
2 cups herb seasoned stuffing
1 tsp. garlic salt
1/2 cup freshly grated Parmesan cheese
1 small onion, grated
1-2 tbsp. olive oil
8 oz. feta cheese, crumbled

-Preheat oven to 350
-Thaw spinach and drain, pressing to remove all excess liquid.
-Combine the spinach and remaining ingredients in a large mixing bowl.
-Roll the mixture by tablespoonfuls into 1-inch balls.
-Place the balls on a lightly greased baking pan.
-Bake for 20 minutes or until golden brown.
