3/4 lb. veal scallops, 1/2 teaspoon salt, 1/2 tsp. celery salt, 1/2 tsp. dry mustard, pinch of pepper, 3 Tbl. flour, 4 Tbl. butter, 1 cup mushrooms, 2 tsp. minced onion, 1 clove garlic minced, 1 Tbl. chopped parsley, 1/2 cup dry sherry.

Mix dry ingredients and dredge veal in it. Brown veal in butter, then add mushrooms, onion, and garlic. Cover and simmer for 20 minutes. Just before serving add parsley and sherry.
