2 T. butter
1 c. chopped celery
1/4 c. chopped onion
2 -10-3/4 oz. cans cream of mushroom soup
1/3 c. chicken broth
4 c. diced, cooked chicken
4 T. soy sauce
2 c. rice, cooked
1 c. chow mein noodles
1 c. cashew nuts

Directions:

Preheat oven to 375º.
In a large sauce pan saute celery and onion with butter until tender. Stir in soup and chicken broth. Simmer 5 minutes. Add chicken and soy sauce. Cook over low heat 5 minutes. Stir in rice.
Spoon into 9x13 baking dish and bake until it bubbles, about 20 minutes. Sprinkle with noodles and nuts on top and brown in oven.
