3 cups chopped zucchini (or you can shred it)
1/2 cup vegetable oil
1 cup bisquick
3 T fresh parsley
1/2 tsp black pepper
1 tsp salt
1/2 cup shredded cheddar cheese
1/2 cup shredded parmesan cheese
4 eggs, beaten

mix all together, pour into greased pie pan & bake at 350 for 45 min or until golden brown on top
