6 lg potatoes
3 hard boiled eggs
1/2 to1 cup chopped white onion
1 cup shredded cheddar cheese
2 cups of milk
1/2 stick of butter

Directions:
Directions:
boil potatoes allow to cool then cool peal and cube
melt butter in saute pan and saute onions till clear about 5 min
add milk then add about 1/4 cup of rue to thicken stirring until thick
add grated cheese
pour in cubed potatoes and mix
stir in cut up hard boiled eggs
if desired top with grated cheese
back at 350 for 30 min or until brown and bubbly
