5 lbs. med. yellow squash
2 beaten eggs
1 1/2 cups bread crumbs, divided
2 Tbsp. chopped onion
1 sm. chopped celery
1/2 cup sugar
salt and pepper to taste
1 1/2 cups cheddar cheese, shredded
1 jalapeno pepper, chopped finely

Directions:
Directions:
Trim squash and cut into medium pieces. Boil until tender. Drain and then mash. In large mixing bowl, combine mashed squash with eggs, 1 cup bread crumbs, onion, melted butter, sugar, salt and pepper. Add cheese and jalapeno pepper. Place in casserole dish and cover with 1/2 cup bread crumbs. Cook till bubbly and golden brown on top.
