3 Tbsp vegetable oil
1/4 cup chopped red pepper
1/2 cup chopped onion
1 clove garlic
2 cup long grain rice
1/2 tsp salt
dash cayenne pepper
2 cups boiling water
2 tsp chicken bouillon powder
1 small tomato, peeled, chopped
3/4 cup frozen peas and carrots (thawed)

Directions:
Directions:
Heat oil in frying pan over medium heat. Add onion, garlic, rice and red pepper. Saute until onion is limp and rice opaque. Add salt, cayenne, water and chicken bouillon powder. Cover and cook for 20 minutes or until liquid is absorbed. Add peas and carrots, and tomato. Cook, stirring just until veggies are heated through.
