1 cup rolled oats
1 cup plain flour
1/2 cup sugar
3/4 cup desiccated coconut
2 T golden syrup
125g butter or margarine
1/2 tsp bicarb soda
1 T boiling water
pinch of salt

Directions:
Directions:
1. Mix oats, flour, sugar, salt and coconut together
2. Melt syrup and butter together
3. Mix soda with boiling water and add to melted butter and syrup
4. Add to dry ingredients.
5. Place spoonfuls of mixture well spaced on a greased slide.
6. Bake in slow over, 150-160ºC for 20 minutes.

This is from The Commonsense Cookery Book and is the best Anzac biscuit recipe I've used.
If using wholemeal flour the mixture tends to be a little drier. Adding an extra tablespoon of boiling water gets the mixture about right.
