10 hard boiled eggs, chopped
1 (6 oz) can pitted olives, diced
salt, pepper, mayonnaise

Long ago when my father was my age, he learned how to make potato salad from my grandmother. When she passed away, her recipe lived on. My dad taught my mother the recipe, and it has been a family favorite for as long as I can remember.

We eat a simplified recipe because my brother (Christopher Kini Kenji Pe'a) and I didn't like the sweet pickles and onions that were in the original recipe.

Grab a fork and eat up because this is a great dish for pot-luck or even midnight snacking.
