Pineapple Chicken Recipe

For Rub and Chicken:
1 tbsp. brown sugar
1 1/2 tbsp. salt
1 tsp. ground coriander
1/2 tsp. black pepper
1/2 tsp. dried thyme
1/2 tsp. onion powder
1/2 tsp. allspice
1/2 tsp. cinnamon
1/4 to 1/2 tsp. cayenne
4 chicken breasts, halves
1 1/2 tbsp. veg. oil
2 cloves garlic, minced
2 scallions, minced

For glaze:
1/4 c. butter
1/4 c. brown sugar
1/4 c. dark rum
1/4 c. pineapple juice

Combine sugar, salt, coriander, pepper, thyme, onion powder, allspice, cinnamon, and cayenne in small bowl and stir.

Set breasts in baking dish and drizzle with oil, rubbing oil on both sides of meat.

Sprinkle the rub, garlic, and scallions on both sides of chicken, patting meat into meat.

Refrigerate 1 hour while you make glaze.

Combine butter, brown sugar, rum, and pineapple juice in heavy saucepan. Boil until syrupy, 7-10 min. over medium high heat. Whisk mixture.

Grill breasts 6 minutes, brush them with glaze, flip and brush the cooked side with glaze, cook another 6 minutes.

Drizzle cooked breasts with remaining glaze.
