Standard Aebleskiver;
4 eggs, separated
1 tbsp. sugar
2 cups cake flour
1/2 tsp. salt
1 tsp. baking powder
2 scant cups milk
1/4 cup melted butter

Beat egg yolk; add sugar. Sift dry ingredients and add alternately with milk and butter. Beat egg whites until stiff, and fold in.

Although they are often called pancakes, aebleskivers are really a delicious dessert that is a cross between a dumpling, a doughnut and a muffin.
With your cast iron aebleskive pan you can make this pastry in 5-10min. on top of your stove.
Heat the pan slightly; melt a little butter in each depression in the pan before filling with batter. and cook over low to medium heat until small bubbles appear. Use spoon or knitting needles to turn the aebleskiver over and cook the other side until golden brown..
For extra tasty treat, add a small slice of apple or a teaspoon of applesauce to the batter before it is turned. It will sink into the batter. Before serving, sprinkle with confectioner;s sugar and serve with butter, maple syrup or jam. Better yet, serve a la mode.
