8-10 boneless, skinless chicken breasts
1 1/2 c. red seedless grapes, quartered
1 1/2 c. pecans, finely chopped
3/4 c. celery, finely chopped
1/4 c. onion, finely chopped
3 c. Hellmann's Mayo, more or less
salt and pepper to taste
1 loaf Louisiana French Bread

Grill chicken and let cool. Chop and put in large bowl. Add all other ingredients and mix well. Adjust amount of Hellman's to desired taste. Serve on buttered, toasted French bread

Sondra is the wife of Karl Finkbeiner and the daughter-in-law of Jeane (Hollenshead) Finkbeiner & the late Charles Finkbeiner. Mom and I had a great chicken salad sandwich at Newk's Express Cafe in Jackson, MS. She asked the chef what kind of bread they used and we conjured up this copycat recipe. Pretty close, if I do say so myself!
