2 T. oil (or bacon grease)
1 c. white rice

Brown under medium heat in skillet until a light brown on all sides--do not hurry this process by turning the fire up high or it will burn. Continue to stir and watch carefully.

Add 2 c. of hot water, 1/2 chopped onion, garlic or garlic powder, salt, pepper, 1/2 t. (more or less) cumin, parsley, bell pepper, chopped tomato (or 2 T. tomato paste). Sometimes I add shredded carrot and red pepper.
Stir and cover. Let cook on low until rice is done--about 20 minutes.
