1 (18 pound) whole turkey
1/2 C. unsalted, butter, softened
salt and pepper to taste
1 1/2 quarts turkey broth
8 C. prepared stuffing

Directions:
1. Preheat oven to 325º. Place rack in the lowest position of the oven.
2. Remove the turkey neck and giblets, rinse the turkey, and pat dry with paper towels. Place the turkey, breast side up, on a rack in the roasting pan. Loosely fill the body cavity with stuffing. Rub the skin with the softened butter and season. Position an aluminum tent over the turkey.
3. Place turkey in the oven, and pour 2 C. turkey broth into the roasting pan. Baste with the juices. Whenever drippings evaporate, add broth to moisten, about 1 to 2 C. at a time. Remove foil after 2 1/2 hours. Roast until 180º, about 4 hours.
4. Let stand for 20-30 minutes before carving.

Note: Lightly spoon stuffing - don't pack it! One holiday when Erin and Emily attempted to help Grandma stuff the turkey and the stuffing was emerging from all the crevices, Grandma laughingly exclaimed, "What are you doing to that poor bird?"
